Abstract

Las últimas investigaciones en microbiología de bebidas fermentadas se centran en la búsqueda de cepas de levaduras no-Saccharomyces autóctonas para la elaboración del vino y otras bebidas fermentadas, debido a la incapacidad de las levaduras Saccharomyces para desarrollar actividades enzimáticas de interés como la actividad β-glucosidasa en vinos, o la menor tolerancia al etanol de las cepas no-Saccharomyces para producir bebidas de bajo contenido alcohólico y la capacidad de ellas para producir tioles volátiles. Además, el uso de cepas autóctonas, mejor aclimatadas a una región, resulta beneficioso ya que estas cepas pueden dominar más fácilmente en la microbiota natural. Las levaduras denominadas no-Saccharomyces dominan las primeras fases fermentativas y participan en la liberación de aromas de interés, mientras que las levaduras del género Saccharomyces dominan fases más avanzadas de la fermentación y contribuyen principalmente al incremento del contenido alcohólico. En este estudio se analizarán muestras de diversos hábitats naturales y se realizarán fermentaciones espontáneas y controladas con el objetivo de seleccionar cepas de interés industrial para la elaboración de bebidas fermentadas de calidad diferenciada.

As últimas investigaciones en microbioloxía de bebidas fermentadas céntrase na búsqueda de cepas de lévedos non-Saccharomyces autóctonos para a elaboración de viño e outras bebidas fermentadas, debido a incapacidade dos lévedos Saccharomyces para desenvolver atividades enzimáticas de interese coma a atividade β-glicosidasa en viños, ou a menor tolerancia ao etanol das cepas non-Saccharomyces para producir bebidas de baixo contido alcohólico e a capacidade destas para producir tioles volátiles. Ademáis, o uso de cepas autóctonas Saccharomyces e non-Saccharomyces mellor aclimatadas a una rexión, resulta beneficioso xa que estas cepas poden dominar máis fácilmente na microbiota natural. Os lévedos denominados non-Saccharomyces dominan as primeiras fases fermentativas e participan na liberación de aromas de interese, mentres que os lévedos do xénero Saccharomyces dominan as fases máis avanzadas da fermentación e contribúen principalmente o incremento do contido alcohólico. Neste estudio analizaránse mostras de diversos hábitats naturáis e realizaránse fermentacións espontáneas e controladas co obxectivo de seleccionar cepas de interese industrial para a elaboración de bebidas fermentadas de calidade diferenciada.

The last investigations in fermented beverages microbiology it focus to search non-Saccharomyces yeasts strains for winemaking and others fermented beverages, due to the inability of Saccharomyces yeasts to develop activities of oenological interest as β-glucosidase activity in wine, or low tolerance of the non-Saccharomyces strains for produce beverages with low alcoholic content and ability from they to produce volatiles thioles. Furthermore, the use of indigenous strains, better acclimatized to a region is beneficial because these strains can more easily dominate the natural microbiota. The so-called non-Saccharomyces yeast dominate the first fermentation stage and participate in the release of aromas of interest, while Saccharomyces yeasts dominate later stages of fermentation and contribute mainly to the increase of ethanol. In this study we will analyze samples from several natural habitats and will makes spontaneous and controlled fermentations with the aim of selecting yeast for the making quality fermented beverages
