Abstract

En este trabajo se evaluó el efecto de la inclusión (por separado y en distinta proporción) de brácteas y plantas de alcachofa ensilada en la alimentación de cabras de raza Murciano-Granadinas, en cuanto a composición, aptitud tecnológica y color de su leche y sensorial de yogur. Se determinó la composición química, la estabilidad al alcohol, la aptitud a la fermentación y el color para todas las muestras de leche, durante dos experimentos. Se realizaron unas pruebas sensoriales con leche y yogures. La inclusión de subproductos de alcachofa ensilados en la alimentación de cabras, no modificó el color, ni las aptitudes tecnológicas de la leche y ni a las características sensoriales del yogurt elaborado con dicha leche

In this study, the effect of artichoke by-products (bracts or whole plan and different concentrations) in the feeding of goats (Granadino-Murciano) was evaluated, to composition, technological and sensory suitability and the color from milk produced. Chemical composition, stability to alcohol, suitability to fermentation, suitability to acid and enzymatic coagulation and color, were analyzed in each milk sample during the study. Also, a sensory trial was executed with yogurt elaborated from the milk samples. The inclusion of artichoke by-products in goat feed didn`t affect to milk color, technological and sensory suitability
