Abstract

[ES] En los últimos años, los alimentos beneficiosos con microorganismos probióticos han ganado un gran interés para su consumo. Un claro ejemplo es el kéfir del cual existen numerosos estudios que abalan su actividad antimicrobiana, inmunoestimulante, antitumoral entre otros efectos beneficiosos. En este trabajo, se plantea la investigación de la comunidad microbiana del kéfir de leche con la finalidad de encontrar microorganismos que presenten actividad antimicrobiana frente a bacterias indicadoras tales como Listeria innocua, Enterococcus faecalis S-47 y Staphylococcus aureus, patógenos causantes de enfermedades en humanos. Mediante el método de cruces en medio sólido y la técnica de ensayo con pocillos en medio líquido con la fracción no microbiana del kéfir. Se concluyó que el mejor efecto antimicrobiano observado fue contra S. aureus y L. innocua en medio sólido con halos de inhibición de entre 5 y 10mm. Mientras que en medio líquido la única actividad antimicrobiana observada fue contra S. aureus. Los resultados obtenidos apoyan la actividad antimicrobiana que presenta la bebida del kéfir probablemente debido a la compleja asociación de cepas próbioticas que producen sustancias antibacterianas.

[EN] In recent years, beneficial products with probiotic microorganisms have gained great interest for their consumption. A clear example is that it contains so many studies that its antimicrobial activity, immunostimulant, antitumor among other beneficial effects. In this work, the investigation of the microbial community of milk cancer was proposed in order to find microorganisms that show antimicrobial activity against indicator bacteria such as Listeria inocua, Enterococcus faecalis S-47 and Staphylococcus aureus, pathogens that cause diseases in humans. By means of the method of crosses in solid medium and the test technique with wells in liquid medium with the non-microbial fraction of kefir. It was concluded that the best antimicrobial effect was against S. aureus and L. innocua on solid medium with inhibition halos between 5 and 10 mm. While in liquid medium the only antimicrobial activity observed was against S. aureus. The results obtained support the antimicrobial activity of the kefir drink, probably due to the new association of probiotic strains that produce antibacterial substances.
