Abstract

[ES] Las aceitunas de mesa son uno de los alimentos fermentados más antiguos y actualmente se consideran un componente esencial en la Dieta Mediterránea, ya que presentan importantes grasas monoinsaturadas (especialmente ácido oleico) y compuestos fenólicos que actúan como antioxidantes en el cuerpo humano. Las aceitunas de mesa, además, son importantes desde el punto de vista económico, siendo España el principal país productor y dentro de este Andalucía es una importantísima región olivarera. Las bacterias del ácido láctico (BAL) y especialmente las cepas de Lactobacillus spp. desempeñan un papel fundamental en la elaboración de aceitunas de mesa y en su conservación. El desarrollo de las BAL en el proceso fermentativo está condicionado por diversos factores como: pH, temperatura, concentración de sal, etc. El desarrollo de cultivos iniciadores en los que están presentes los lactobacilos constituye una significativa herramienta tecnológica para la fermentación de las aceitunas de mesa.

[EN] Table olives are one of the oldest fermented foods and currently considered an essential component in the Mediterranean Diet, since they have important monounsaturated fats (especially oleic acid) and phenolic compounds that act as antioxidants in the human body. Table olives, in addition, are important from the economic point of view, being Spain the main producing country and within this Andalucia is an important olive-growing. region. Lactic acid bacteria (LAB) and specially Lactobacillus spp. strains play a fundamental role in the production of table olives and their conservation. The development of LAB in the fermentation process is conditioned by various factors such as: pH, temperature, salt concentration, etc. The development of starter cultures in which lactobacilli are present constitutes a significant technological tool for the fermentation of table olives.
