Abstract

El amaranto es un pseudocereal perteneciente a la familia de plantas de las amarantáceas. Varias de estas especies se cultivan como verduras, cereales o plantas ornamentales. Presenta múltiples razones por las que se llega a considerar el alimento del futuro, como es, su valor nutritivo, la resistencia de su semilla a climas extremos, su alta disponibilidad de cultivo en regiones áridas y secas, además de ser una alternativa para solucionar problemas ambientales debido a su alto poder absorbente. Sin embargo, este beneficio también puede convertirse en perjudicial para la salud, debido a que puede absorber diferentes metales contaminantes por las condiciones medioambientales. Por consiguiente, en este Trabajo de Fin de Grado se realiza una investigación bibliográfica sobre los métodos de análisis para la determinación de metales pesados en amaranto.

Amaranth is a pseudocereal that belongs to Amaranthaceous family plants. Several of this species grow as vegetables, cereals or ornamental plants. It presents multiple reasons to be considered the food of the future, such as its nutritional value, the resistance of its seeds to extreme climates, its high availability of cultivation in arid and dry regions, as well as being an alternative to solve environmental problems due to its high absorbent power. However, this benefit can also become harmful to health, because it can absorb different polluting metals due to environmental conditions. Therefore, in this Final Degree Project a bibliographic investigation is carried out on the analysis methods for the determination of heavy metals in amaranth.
