Abstract

Las micotoxinas son metabolitos secundarios generados por hongos de las especies Aspergillus, Penicillium, Fusarium, que causan efectos tóxicos en humanos y animales. Esta contaminación se ve clara en alimentos con crecimiento fúngico como semillas y cereales. Nuestro estudio va a consistir en investigar la presencia de la ZEA en trigo y derivados como por ejemplo en derivados de harina de trigo. también vamos a comparar las diferentes técnicas que se llevan a cabo en todos los análisis que se hacen para el estudio de esta micotoxina. Lo que se ha comprobado es que para el análisis de estos contaminantes presentes en el trigo, en este caso la técnica que más se utiliza es la cromatografía líquida de alta eficacia.

Mycotoxins are secondary metabolites generated by fungi of the species Aspergillus, Penicillium, Fusarium, which cause toxic effects in humans and animals. This contamination is clear in food with fungal growth, such as sedes and cereal. Our study will consist of investigating the presence of Zearalenone in wheat and derivates such as wheat flour derivates. We will also compare the different techniques that will be carried out in all the analyzes performed for the study of this mycotoxin. What has been shown is that for the analysis of these contaminants present in wheat in this case, the most commonly used technique is high performance liquid chromatography
