PROANTOCIANIDINAS NA DIETA HUMANA. INFLUÊNCIA NA PREVENÇÃO DE DOENÇAS CARDIOVASCULARES

Abstract

Existem dados indicativos de uma ligação entre a baixa incidência de doenças do foro cardíaco e o consumo de alimentos de origem vegetal. Desde a introdução do conceito do paradoxo Francês, têm sido publicados inúmeros trabalhos científicos, que tentam explicar essa associação e identificar os componentes, presentes no vinho, chá, cacau e outros alimentos, responsáveis pela redução da mortalidade devida a doenças das coronárias. O vinho tinto e outros alimentos obtidos a partir de plantas são excelentes fontes de polifenóis, todos com elevada capacidade antioxidante. As proantocianidinas têm sido apontadas como justificando o maior efeito do vinho tinto, quando comparado com o vinho branco e outras bebidas alcoólicas, na prevenção de doenças cardiovasculares. O presente artigo pretende ilustrar o conhecimento actual sobre proantocianidinas, a sua actividade química, ocorrência, consumo, biodisponibilidade, metabolismo e o seu papel na redução dos riscos associados às doenças cardiovasculares.
