Abstract

The effects of maturity stage, cuticle and scar characteristics, and fruit position within the plant were studied in blueberry fruit (Vaccinium corymbosum) as factors associated to softening and dehydration during postharvest. A high variability in fruit firmness at harvest was corroborated (5 to 50% very soft fruit).between seasons, between harvests and between maturity stages, which resulted in significant differences in storage potential, softening and dehydration patterns. The triterpenoid fraction in fruit cuticle at harvest also led to differences between cultivars. Berries harvested from the East side of the plant contained higher proportion of soft fruit. Maximum extreme temperatures during the last phase of fruit ripening and/or precipitations during fruit growth and maturation also caused larger proportions of soft fruit. The stem scar was responsible for up to 40 % of fruit weight loss, its influence being higher at low temperature.
