Abstract

La actividad humana es la causa fundamental de la contaminación ambiental. Concretamente, la generación de residuos es uno de los principales problemas de la sociedad actual, siendo los residuos agroalimentarios de especial interés debido al volumen generado a nivel mundialEste proyecto forma parte de una línea de investigación que busca reducir el impacto ambiental de los residuos agroalimentarios, mediante su empleo en bioprocesos. En el presente trabajo, se evaluó la posibilidad de utilizar cascarilla de cacao, residuo procedente de la industria chocolatera, como sustrato en procesos fermentativos. Para ello, se llevaron a cabo diferentes tratamientos de hidrólisis, con el fin de maximizar la extracción de azúcares fermentables. Los caldos obtenidos en los diferentes ensayos realizados fueron caracterizados en base a su contenido en azúcares totales y reductores. Asimismo, se analizó la posible presencia de compuestos inhibidores (furfural, HMF y ácido acético) del proceso de fermentación.
