Abstract

RESUMEN : La nutrigenómica estudia la variabilidad entre los individuos y la influencia que los nutrientes tienen sobre el grado de expresión de los genes. Con este nuevo enfoque se pretende mejorar la salud y prevenir el desarrollo de enfermedades crónicas relacionadas con la alimentación y los estilos de vida. El comportamiento alimentario involucra acciones que se empiezan a establecer en el ser humano desde el nacimiento y que se relacionan con los alimentos, el entorno social y familiar, generando conductas de imitación de modelos de acuerdo con la disponibilidad de alimentos, el estatus social, los símbolos afectivos y las tradiciones culturales que tienen que ver con el desarrollo del comportamiento alimentario. Aunque asociación de la nutrigenómica con el comportamiento alimentario es relativamente reciente, en este artículo se presenta una revisión del estado actual de la nutrigenómica en aquellos estudios relacionados con el comportamiento alimentario y en algunos trastornos de la conducta alimentaria como la asociación de los polimorfismos en un solo nucleótido (SNP) con enfermedades relacionadas al metabolismo de algunos nutrientes adquiridos en la dieta, así como también aquellos cambios epigenéticos que pueden afectar la respuesta del organismo a la dieta, los cuales son transmitidos de generación en generación o que son adquiridos por los alimentos ingeridos.

ABSTRACT : Nutrigenomics studies the variability between individuals and the influence that nutrients have on the level of gene expres-sion. This new approach aims to improve health and prevent the development of chronic disease related to diet and lifestyle. The feeding behavior involves actions that are beginning to establish in humans from birth and that relate to food, and to social and family environments, generating imitation of behavior according to food availability, social status, the emotional symbols and cultural traditions that have to do with the development of eating behavior. Although nutrigenomics association with eating behavior is relatively recent, this article presents a review of the current state of nutrigeno-mics in studies related to feeding behavior and some eating disorders and the association of polymorphisms in a single nucleotide (SNP) with diseases related to the metabolism of some nutrients acquired in the diet, as well as those epige-netic change that can affect the body`s response to the diet, which are transmitted from generation to generation or are acquired by food ingested.
