RESUMEN: El presente estudio busca elaborar y caracterizar un producto denominado fibra, a partir de los residuos resultantes del procesamiento de la naranja, limón, mandarina, piña y maracuyá. Para justificar el empleo como materia prima de estas fibras, se efectúa el análisis cuantitativo limitándose al contenido de humedad, cenizas, fibra cruda, proteína cruda, carbohidratos totales, además del contenido de hierro, fósforo, fibra dietaria total, fibra dietaria soluble y fibra dietaria insoluble. Los resultados muestran estos productos como fuentes muy altas de fibra dietaria tanto soluble como insoluble, con buen contenido de hierro, fósforo, y otros nutrientes a excepción de la grasa cruda. Este conocimiento permite formular recomendaciones para su empleo en productos alimenticios y farmaceúticos.
ABSTRACT: The present study seeks to elaborate and characterize a product called fiber, from the residues resulting from the processing of orange, lemon, mandarin, pineapple and passion fruit. To justify the use as raw material of these fibers, the quantitative analysis is carried out limiting the content of moisture, ash, crude fiber, crude protein, total carbohydrates, in addition to the content of iron, phosphorus, total dietary fiber, soluble dietary fiber and fiber. insoluble dietary. The results show these products as very high sources of both soluble and insoluble dietary fiber, with a good content of iron, phosphorus, and other nutrients with the exception of crude fat. This knowledge allows to formulate recommendations for its use in food and pharmaceutical products.
