Abstract

La alergia a alimentos es un problema de salud mundial, siendo la alergia a huevo de las más prevalentes en niños. Los alérgenos principales del huevo son la ovoalbúmina (OVA) y el ovomucoide (OM), aunque la lisozima también es relevante dada su ubiquidad. En esta tesis doctoral se ha comprobado que el procesado habitual de los alimentos, como el tratamiento térmico o el almacenamiento, o la matriz alimentaria (presencia de lípidos y polisacáridos), puede reducir o aumentar la capacidad de unión a IgE de dichos alérgenos, aunque, en rasgos generales, la digestión y reactividad de los digeridos es similar que a la proteína sin procesar, aunque depende de la proteína que se considere y de la intensidad del procesado, así como el tipo de matriz en la que se encuentre. Por otra parte, a pesar de los avances en inmunología, la opción más común para alérgicos es evitar el alimento dañoso. No obstante, la inmunoterapia oral con fórmulas procesadas hipoalergénicas es una alternativa prometedora. En este trabajo se ha determinado que la hipoalergenicidad y las propiedades terapéuticas de la clara de huevo calentada con bajo contenido en OM probablemente residan en su elevada digestibilidad, inducida por el procesado. La inmunoterapia oral con dicha fórmula en ratones impide reacciones alérgicas manifiestas tras una prueba de provocación oral, disminuyendo la liberación de histamina y la concentración sérica de IgE específica.
