Abstract

La cerveza es una de las bebidas más consumidas en todo el mundo. La producción y consumo de cerveza artesanal presenta una tendencia alcista, intentando recuperar la tradición en la elaboración, mientras que la cerveza industrial está asociada a buscar una mayor producción, pudiendo comprometer la calidad del producto final. Es por ello que se analizó la cantidad de proteína, fibra, fenoles totales y capacidad antioxidante en distintos tipos de cervezas artesanales e industriales para establecer una comparación cuantitativa y relacionarlos con las materias primas que se utilizan, procesos de elaboración y distintas variables que influyen durante el procesado. Se obtuvo una mayor cantidad de compuestos bioactivos en las muestras de cerveza artesanal que en las de cerveza industrial. Estas diferencias se atribuyen a las materias primas y a las diferentes etapas del procesado. En este sentido, algunas cervezas artesanas aportan hasta un 26% de las recomendaciones de fibra y un 5% y un 13% de la ingesta total de fenoles y capacidad antioxidante de la dieta española. En relación a las variables de elaboración, a mayor densidad inicial, se obtienen cervezas con un mayor contenido en proteína, mientras que a mayor densidad final, el contenido en fibra aumenta y, a mayores grados de amargor, se obtienen cervezas con mayor contenido en fenoles totales y capacidad antioxidante.
