Abstract

Durante a maturação das uvas, a sua película fica exposta a variadíssimas condições climatéricas. Na vinificação todo o processo exige um apertado controlo, para que não ocorram problemas desagradáveis na qualidade final do produto. Muitas destas situações poderão ser desencadeadas por fungos, bactérias e leveduras. A acção descontrolada destes microrganismos pode comprometer a qualidade do produto final e ter impactos económicos fortes para as empresas, quando estes problemas são percebidos pelos consumidores. Os vinhos envolvidos neste estudo são tintos da casta syrah da colheita de 2008, e sofreram diferentes formas de estágio. Os vários ensaios revelaram que entre os vinhos estudados, o que apresenta uma maior estabilidade microbiológica é o vinho que permaneceu em cuba de inox durante o desenrolar dos ensaios. Em relação aos vinhos, cujo estágio decorreu em barricas novas, não houve uma notória diferença de resultados em relação aos vinhos que se encontravam a estagiar em barricas usadas.
