Cell-based meat : hype or industry disruptor?

Abstract

Churchill (1931) disse: "escaparemos ao absurdo de cultivar um frango inteiro para comer o peito ou a asa, cultivando estas partes separadamente num meio adequado" (para. 12). A procura global de proteínas está a colidir com imperativos de sustentabilidade, tornando a carne produzida in vitro uma realidade emergente. Este trabalho investiga a carne baseada em células (CBM), cultivada a partir de células estaminais em meios ricos em nutrientes, como uma solução alimentar e um potencial disruptor da indústria da carne convencional. Uma abordagem de métodos mistos utilizou abordagens quantitativas e qualitativas com um inquérito aos consumidores, entrevistas a peritos e revisão da literatura. Os consumidores demonstraram uma aceitação considerável em relação à CBM, considerando-a segura, saudável e natural. No entanto, persistiram dúvidas sobre a tecnologia. A familiaridade prévia e o envolvimento emocional com o CBM surgiram como factores determinantes da aceitação. Os consumidores mostraram também uma forte vontade de pagar um prémio pela CBM. Os peritos assinalaram vários obstáculos enfrentados pela CBM, nomeadamente a sua imaturidade tecnológica, a falta de aceitação generalizada e ambientes regulamentares ambíguos. De um modo geral, o potencial da CBM para emergir como um factor de perturbação a curto ou médio prazo na indústria da carne parecia improvável. Em vez disso, previmos que o CBM continuará a ser um produto de nicho num futuro previsível.

Churchill (1931) said, “we shall escape the absurdity of growing a whole chicken in order to eat the breast or wing by growing these parts separately under a suitable medium” (para. 12). Global demand for protein is colliding with sustainability imperatives, making meat produced in vitro an emerging reality. This work investigates cell-based meat (CBM), grown from stem cells within nutrient-rich media, as a food solution and potential disruptor of the conventional meat industry. A mixed methods approach employed quantitative and qualitative approaches with a consumer survey, expert interviews, and review of the literature. Consumers demonstrated considerable acceptance towards CBM perceiving it as safe, healthy, and natural. However, misgivings persisted about the technology. Prior familiarity and emotional engagement with CBM emerged as determinants of acceptance. Consumers also exhibited strong willingness to pay a premium for CBM. Experts noted various hurdles faced by CBM, inter alia its technological immaturity, lack of mainstream acceptance, and ambiguous regulatory environments. Overall, CBM’s potential to emerge as a short or mid-term disruptor in the meat industry appeared improbable. Instead, we predicted that CBM will remain a niche product in the foreseeable future.
