Se han analizado los aminoácidos libres de un lote de 15 quesos manchegos comerciales y se han detectado e identificado 16 aminoácidos diferentes. Se ha estimado semicuantitativamente que la media de aminoácidos libres totales del queso manchego es de unos 10 mg g-t de queso. Los valores varían en los quesos individuales entre 20 mg g-1 y 3,6 mg g-l aproximadamente. Los aminoácidos libres cuantitativamente predominantes son la leucina (con una media de 2,5 mg g-1 y la lisina e histidina (con medias próximas a 2,0 mg g 1). Los detectados en menor cantidad son la serina, glicina y ornitina. La cantidad de aminoácidos libres totales de los quesos del lote esta relacionada, a nivel altamente significativo, con sus corrrespondientes valores aw.
