Abstract

Na Indústria Alimentar, principalmente nas cadeias de retalho alimentar, são constantemente introduzidos, no mercado, novos produtos alimentares. Atualmente, sendo o consumidor cada vez mais exigente e informado, é imprescindível uma oferta de cariz qualitativo, no que concerne à parte nutricional. Assim, no departamento de nutrição do retalhista alimentar, em questão neste trabalho, foi sentida a necessidade de uniformizar alguns processos, nomeadamente a avaliação das fichas técnicas dos novos produtos e a emissão do parecer da equipa para conhecimento das restantes equipas envolvidas no desenvolvimento, antes do lançamento no mercado desses mesmos produtos. Melhorando assim também a comunicação interna. Perante este facto, surgiu a premência da criação de uma matriz de risco, com o objetivo de capacitar um produto alimentar da sua aptidão, ou não, para ser lançado no mercado, de acordo com a sua gama dentro da marca própria do retalhista e os critérios internos definidos para o tipo de produto. Quando a decisão de risco nutricional é levada à matriz de risco, a equipa de nutrição fica com três respostas fechadas: "risco elevado", "risco médio" e "risco baixo", para comunicar o seu parecer sobre um produto e passar essa informação às restantes equipas.

In the Food Industry, mainly in food retail chains, new food products are constantly introduced into the market. Currently, as consumers are increasingly demanding and informed, a qualitative offer is essential nutritional wise. Thus, in the nutrition department of the food retailer the present work is based on, the need for standardizing processes was felt, namely in the evaluation of the technical data sheets of new products and the issuance of the team's opinion, before the launch of these products into the market. According to the factors above mentioned, there was an urgent need to create a risk matrix, with the aim of enabling a food product, whether suitable or not, to be launched, according to its range within the retailer's private brand and the internal criteria for the type of product in question. When the nutritional risk decision is taken to the risk matrix, the nutrition team is left with three closed answers: "high risk", "medium risk" and "low risk", to communicate its opinion on a product and pass this information on to the other teams.
