A toxinfeção estafilocócica: contagem de microrganismos e pesquisa de enterotoxinas em produtos alimentares

Abstract

As toxiinfecções, alimentares (TIAs) devidas à presença de um microrganismo patogénico ou da sua toxina num alimento, são muito frequentes e com repercussões consideráveis na saúde humana. Na maioria das vezes a determinação da causa exige uma análise microbiológica, para melhor se determinar, e de forma mais precisa, a frequência destes incidentes numa população. A sintomatologia decorrente da infecção por Staphylococcus aureus, é sobretudo devida a uma enterotoxina produzida no alimento por este microrganismo e que ocorre com maior frequência aquando da manipulação de alimentos por alguém infectado ou por um portador são. Por estas razões, considera-se relevante a sua pesquisa e contagem microbiológica regular em laboratórios de análises de rotina, por forma não só a estimar a sua incidência em amostras alimentares mas também a sua dose infecciosa, correlacionando-a com uma eventual presença da respectiva enterotoxina toxina. É neste âmbito que este trabalho se insere, na pesquisa e enumeração do agente Staphylococcus aureus e pesquisa, caso os produtos e/ou resultados das contagens o determinem, das respectivas enterotoxinas em produtos alimentares, analisados no Laboratório de Microbiologia (LM) da ASAE, seguido de análise dos dados, para melhor se poder avaliar a sua prevalência e impacto na saúde pública. Foram analisadas 331 amostras de alimentos (lácteos e outros) para quantificação de S.aureus, cuja qualidade microbiológica se revelou satisfatória, tendo em conta a legislação em vigor. Tendo em conta a implementação do método de referência europeu para pesquisa de enterotoxinas no mesmo Laboratório, fizeram-se 41 testes em amostras não contaminadas e em amostras contaminadas, com diferentes quantidades de enterotoxinas, pelo método EURL, o qual se revelou eficaz em 87,8 % dos testes. Entre estas amostras, algumas foram ainda sujeitas a variações de pH, nas fases de acidificação e/ou neutralização, para além dos intervalos regulamentados, tendo 77,7 % obtido resultados em conformidade com o esperado. Estes resultados confirmam a eficácia do método implementado para a detecção de toxinas estafilocócicas, no LM, respeitando todos os requisitos regulamentados para o método.

The toxinfections, food due to the presence of a pathogenic microorganism or its toxin in food, are very frequent and have a significant impact on human health. Most often the case requires a determination of the microbiological analysis to better determine the frequency of these events in a population. The symptoms resulting from infection by Staphylococcus aureus, is mainly due to an enterotoxin produced by this microorganism in the food and occurs more frequently when handling food by an infected person or a healthy carrier. For these reasons, it is considered relevant to your search and regular microbiological count in routine analytical laboratories in order not only to estimate its impact on food samples but also their infectious dose, correlating it with a possible presence of their enterotoxin toxin. It is in this context that this work is inserted, research and enumeration of Staphylococcus aureus agent and research if the products and / or results of the counts provide, their enterotoxins in food products analyzed in the Microbiology Laboratory (LM) of the ASAE, followed by data analysis, to better able to assess the prevalence and impact on public health. 331 food samples were analyzed (milk and others) for quantification of S. aureus, whose microbiological quality has proved satisfactory, taking into account the legislation. Having regard to the implementation of the European reference method for enterotoxin research in the same laboratory, there have been 41 tests in uncontaminated samples and samples contaminated with different amounts of enterotoxin by EURL method, which has proved effective in 87, 8% of the tests. Among these samples, some were still subject to changes in pH at the stage of acidification and / or neutralization, in addition to the regulated ranges having 77.7% obtained in accordance with the results expected. These results confirm the effectiveness of the method implemented for the detection of Staphylococcal toxins in LM, complying with all the requirements regulated to the method.
