Abstract

Los problemas medioambientales generados por la excesiva utilización de envases para alimentos derivados del petróleo hacen que se plantee la necesidad de buscar nuevos materiales de envasado biodegradables, comestibles o no. La presente Tesis Doctoral se centra en el desarrollo de films biodegradables basados en proteínas de lactosuero o quitosano empleando tecnologías novedosas como la radiación ultravioleta (combinada o no con la modificación del pH) o la adición de una nanoarcilla y un antimicrobiano con la finalidad de mejorar sus propiedades y así ser candidatos a sustituir, al menos en parte, a los materiales de envasado convencionales. Para ello se evaluaron diferentes características de los films como las propiedades mecánicas, la permeabilidad al vapor de agua, la solubilidad, el color y la microestructura.
