Problemática de los alimentos vegetales mínimamente procesados en fresco

Abstract

Durante los últimos años se ha notado un cambio notable en los hábitos alimentarios de la población. No sólo se espera satisfacción de la comida, sino tambien que contribuya a mejorar nuestra salud y bienestar. Además, cada vez es más escaso el tiempo para su preparación. Debido a esto, las frutas y hortalizas mínimamente procesadas en fresco constituyen un sector de rápido crecimiento en la industria de los alimentos. Tratandose de productos muy perecederos, deben ser manipulados siguiendo estrictas normas de control de calidad. En este artículo se describen las principales alteraciones físicas, fisiológicas y microbiológicas que más frecuentemente presentan y se indican algunas pautas generales acerca de la tecnología actualmente disponible para su control.
