Abstract

A empresa Lusiaves S.A. é um dos maiores produtores nacionais de carne de aves, sendo por isso uma referência a nível nacional de internacional na produção e transformação de carne de frango e perú. A carne de frango constitui uma fonte nutritiva de elevada qualidade e a sua procura e consumo têm aumentado exponencialmente nos últimos anos. A carne e miudezas de frango são alimentos muito perecíveis, e para manter estes alimentos frescos e seguros são utilizadas embalagens com atmosfera modificada, aumentando assim o tempo de vida útil dos referidos alimentos. A atmosfera no interior destas embalagens é constituída por uma mistura de gases adequada a cada alimento, com o objetivo de preservar a frescura e a qualidade durante mais tempo. Indo ao encontro dos interesses da empresa, este trabalho pretende avaliar a causa das alterações das embalagens e de cor das miudezas de frango. Serão, assim, testadas diferentes embalagens com atmosfera modificada e monitorizada a percentagem de gases no seu interior ao longo de todo o tempo de vida útil dos produtos alimentares. O estudo terá especial incidência nos fígados de frango embalados em atmosfera modificada, bem como o seu comportamento em diferentes momentos, do processamento até às prateleiras de supermercado. Pretende-se identificar e eliminar a causa das alterações no produto e respetiva embalagem e, simultaneamente, procurar soluções que podem passar por inovações na embalagem.

Lusiaves S.A. is one of the largest national producers of poultry and is a national and international reference in the production and processing of chicken and turkey meat. Chicken meat is a high-quality nutritional source and its demand and consumption has increased exponentially in recent years.Chicken meat and giblets are very perishable foods, and in order to keep these fresh and safe, modified atmosphere packaging is used, thus increasing the shelf life of such foods. The atmosphere inside these packages is made up of a mixture of gases adapted to each product, with the aim of preserving freshness and quality for longer. Aligned with the company's interests, this work aims to assess the cause of the changes in packaging and colour of chicken giblets.Different packages with modified atmosphere will be tested and the percentage of gases inside them will be monitored throughout the shelf life of the food products. The study will have a particular focus on chicken livers packaged in modified atmosphere, as well as their behaviour at different times, from processing to supermarket shelves. The aim is to identify and eliminate the cause of changes in the product and its packaging and, at the same time, seek solutions that could involve innovations in packaging.
