Abstract

Os corantes têm um papel de importância vital na escolha e aceitação dos alimentos, sendo que, a cor de um alimento ou de uma bebida, é uma das primeiras sensações reconhecidas pelos sentidos dos consumidores dos produtos.1 São usados desde que a civilização humana existe e foram sofrendo uma evolução ao longo dos tempos, existindo hoje um enorme número de corantes diferentes e uma regulamentação criteriosa, que deve ser cumprida. Constituem um tipo de aditivos muito controverso, dado que na maioria dos casos o seu emprego não é fundamental e dele poderão advir vários problemas para o consumidor. Os corantes artificiais são os corantes mais prejudiciais, e deles surgem a maioria dos problemas relacionados com os corantes. O objetivo deste trabalho é avaliar o impacto que o consumo de corantes artificiais traz para a saúde dos consumidores, assim como, de que forma é que as autoridades competentes tentam atenuar e controlar esses efeitos.

Dyes have a role of vital importance in the choice and acceptance of the food, and the color of a food or a drink, is one of the first sensations recognized by the senses of the consumer products. They are used in order to make the food more palatable. They are used as long as human civilization exists and have been suffering an evolution over time. Nowadays there are a huge number of different colors and a careful regulation, which must be fulfilled. They are also a kind of very controversial additives, as in most cases their use is not essential and it may result from several problems for consumers. Artificial coloring are the most harmful dyes, and most of them bring problems to the people who consume them. The objective of this study is to evaluate the impact that the use of artificial colors brings to the health of consumers, as well as how it is that the competent authorities are trying to mitigate and control these effects.
