Abstract

As dietas vegetarianas incluem uma vasta gama de práticas alimentares heterogéneas na composição e com restrições variáveis e que, na prática, são tradicionalmente conhecidas por excluírem os alimentos de origem animal. Objetivos: Rever e analisar a informação existente na literatura científica, acerca dos efeitos das dietas vegetarianas sobre a saúde humana e discutir os problemas relacionados com os défices de nutrientes a elas associados. Métodos: Foi realizada uma pesquisa bibliográfica na base de dados Pubmed, limitada a publicações entre 2000 e 2012, utilizando os termos “vegetarian diet AND adverse effects” e “vegetarian diet AND risks” e uma pesquisa adicional na mesma base de dados com os termos “vegetarian diet AND soy effects”. Conclusão: As dietas vegetarianas, quando bem planeadas, podem fornecer os nutrientes adequados para uma saúde ótima a indivíduos de qualquer faixa etária, atletas, grávidas e lactantes. Por outro lado, as dietas vegetarianas muito restritivas e desequilibradas estão associadas a um aumento do risco de deficiência de vitaminas B12 e D, cálcio, ferro, iodo, selénio, zinco, ácidos-gordos polinsaturados n-3 e de certos aminoácidos e, o consumo excessivo de alimentos ricos em isoflavonóides, como a soja e derivados, pode ter efeitos indesejados na saúde

Vegetarian diets include a variety of dietary practices, which are heterogeneous in their composition and have variable restrictions. Currently, vegetarian diets are traditionally known for excluding animal products. Objective: Review and analysis of current information found in scientific literature about the effects of vegetarian diets on human health and discussion of issues related to nutrient deficits associated with vegetarian diets. Methods: A literature research in PubMed database was performed, referring to publications dated between 2000 and 2012, using the terms "vegetarian diet AND adverse effects" and "vegetarian diet AND risks" and an additional research in the same database using the terms" vegetarian diet AND soy effects". Conclusion: Vegetarian diets, when properly planned, can provide adequate nutrients for an optimal health for individuals of any age, athletes, pregnant and lactating women. However, restrictive and unbalanced vegetarian diets are associated to an increased risk of nutrient deficits, such as, vitamins B12 and D, calcium, iron, iodine, selenium, zinc, n-3 polyunsaturated fatty acids and certain amino acids, and excessive consumption of isoflavonoids, found in soybeans and its derivatives, may lead to undesirable effects on health
