O Pão em Terras de Santa Maria

Abstract

O pão foi, provavelmente, o primeiro alimento elaborado pelo homem, na pré-história. Desde sempre que o pão nos acompanha como um dos principais alimentos na mesa, sendo o alimento mais popular em todo o mundo, produzido em todas as sociedades. No entanto, ele não é confecionado sempre da mesma forma, nem com os mesmos ingredientes e assume aspetos, tamanhos e sabores muito distintos, dependendo da região. Ao longo do tempo sofreu alterações na sua confeção até chegar ao pão que hoje conhecemos. Em termos alimentares, o pão foi e continua a ser fundamental nos atuais padrões alimentares e omnipresente em todas as mesas e nas mais variadas formas. Acompanhando a história e tendo sido um dos protagonistas em diversos marcos da evolução da civilização humana, o pão chega aos dias de hoje recebendo a mesma paixão que outrora lhe nutriam. Hoje em dia, o pão está disseminado pelo mundo. O seu fabrico envolve vários métodos diferentes, que resultam numa variedade enorme de tipos e qualidades de pães. O pão simboliza costumes alimentares e representa a tradição de um local, ao mesmo tempo que marca o nosso tempo através de processos de globalização cultural. Por todo o mundo este alimento é a marca da identidade de um povo, da sua história. Continua a ser o alimento mais democrático, consumido nos quatro cantos da Terra. Para alguns, tem papel de protagonista, como no nosso país, presente em todas as refeições. O pão, para além de alimento rico em termos nutricionais, fonte de energia e saciedade, é também um alimento espiritual, com um importante significado simbólico-religioso, que se manifesta diariamente em qualquer parte do mundo. O pão que hoje comemos, pouco se assemelha ao pão que se cozia em cada lar e que por vezes, durava a semana toda. Era esse pão, que em tempos de crise, matava a fome a inúmeras pessoas da casa. Era desse pão que, grande parte das vezes, a refeição unicamente se constituía. Numa tentativa de conhecimento dessa tradicionalidade no ato de fazer o pão em Terras de Santa Maria, nas linhas que se seguem serão descritos os pães típicos desta região, pela voz de quem ainda o amassa.

Bread was probably the first food made by man in pre-history. Bread has always had an important place on every table. It is the most popular food in the world, and it is produced in all societies. However, its manufacturing process, the ingredients used, its size, form and taste vary a lot from region to region. The methods of producing bread have changed over time until it finally became the bread we know today. Bread has always been an essential element in our diet and, according to the current eating habits, it remains a constant presence on every table. Throughout History, bread had a leading role in various moments of the evolution of human civilization and nowadays it inspires the same passion it has always deserved. Today, bread is spread all over the world. Its manufacturing process involves several different methods that result in a wide variety of types and qualities of bread. Bread symbolizes eating habits and represents a local tradition. At the same time, it defines our times through cultural globalization processes. All over the world this food is a symbol of the identity of one nation and its history. It remains the most democratic food, consumed in the four corners of the earth. For some, as in our country, bread is there in every meal. Besides being rich in nutrients and as a source of energy and satiation, bread is also a spiritual food, with an important symbolic and religious meaning, which is felt every day all over the world. The bread that we eat today little resembles the bread that was baked in every home and that sometimes lasted the whole week. It was the bread, which in times of crisis, fed many people in the house. This bread was very often what the meals consisted of. In an attempt to know the traditions around the act of baking bread in our town, Terras de Santa Maria, the lines below will describe the typical breads in this region and how they are produced by the local bakers.
