O vinho é um produto alimentar que revelou ao longo da história, uma elevada mobilidade e capacidade de expansão, estando presente em todos os continentes, contendo uma forte referência à identidade territorial do local onde é produzido e às suas tradições. O vinho quando integrado com o turismo (enoturismo) pode transformar-se num ecossistema regenerativo, quando, para além dos efeitos catalisadores no desenvolvimento sustentável das regiões, respeita e fortalece as comunidades, dando vida aos seus saberes e promove impactes positivos no meio ambiente e na sociedade. A experiência de Enoturismo tem vindo a consolidar-se entre os consumidores, no entanto, os estudos que associam a Oferta enoturística à valorização e promoção dos Patrimónios Alimentares (PA) tradicionais e ao seu contribuindo para a notoriedade e desenvolvimento dos territórios, não têm acompanhado esta popularidade. A atividade turística deve criar condições favoráveis para que os ecossistemas se revitalizem. Assim, a presente tese, ambiciona enriquecer a experiência de enoturismo no Alto Douro Vinhateiro (ADV), à luz dos saberes e sabores das suas heranças enogastronómicas. A escolha deste território ancorou-se em vários fatores, como a singularidade da paisagem, a riqueza do património histórico, social, cultural e gastronómico, a notoriedade da produção vitivinícola e a relevância do enoturismo para o desenvolvimento regional e do turismo. Na prossecução dos objetivos optou-se por uma abordagem metodológica de estudo de caso com triangulação de métodos, fontes e dados. Através do Arquétipo das 4 PIPAs (Poderes Identitários do Património Alimentar) de Trás-os-Montes e Alto Douro, é possível conhecer um sentido de unidade culinária daquele território enogastronómico, (ancorado em diversos livros da cozinha tradicional e regional de Portugal). As práticas enogastronómicas e as experiências de enoturismo foram compiladas na Matriz dos Patrimónios Alimentares (MPA) que reuniu 5 R’s Estratégicos da Gastronomia e Vinhos da região e na informação de experiências enogastronómicas promovidas nos websites das quintas de enoturismo. Os resultados mostram que a oferta dos restaurantes e as experiências de enoturismo no Douro, valorizam de forma clara e promovem os seus Patrimónios Alimentares.
Wine is a food product that, throughout history, has demonstrated high mobility and capacity for expansion, being present on all continents and strongly reflecting the territorial identity of its place of production and traditions. When integrated with tourism (wine tourism), wine can become a regenerative ecosystem that, beyond its catalytic effects on the sustainable development of regions, respects and strengthens communities, bringing life to their knowledge and promoting positive impacts on the environment and society. Wine tourism experiences have been increasingly embraced by consumers. However, studies that link wine tourism offerings to the appreciation and promotion of traditional Food Heritage (FH) and its contribution to the recognition and development of territories have not kept pace with this popularity. Tourism activities should create favourable conditions for ecosystems to revitalize. Thus, this thesis aims to enrich the wine tourism experience in the Alto Douro Vinhateiro (ADV), through the knowledge and flavours of its eno-gastronomic heritage. The choice of this territory was anchored in several factors, such as the uniqueness of its landscape, the richness of its historical, social, cultural, and gastronomic heritage, the reputation of its wine production, and the relevance of wine tourism for regional development and tourism. To achieve the objectives, a case study methodological approach was adopted, with a triangulation of methods, sources, and data. Through the Archetype of the 4 FHPI’s (Food Heritage Identity Powers) of Trás-os-Montes and Alto Douro, it is possible to understand a sense of culinary unity within this eno-gastronomic territory (based on various traditional and regional Portuguese cookbooks). The eno-gastronomic practices and wine tourism experiences were compiled in the Food Heritage Matrix (FHM), which gathered the region’s 5 Strategic Rs of Gastronomy and Wine, as well as information on eno-gastronomic experiences promoted on the websites of wine tourism estates. The results show that the offerings of restaurants and wine tourism experiences in the Douro clearly value and promote its Food Heritage.
