Concentrado de proteína a partir de residuos de pescado procedentes de la industria de transformación

Abstract

La sobreexplotación a que están siendo sometidas las más importantes pesquerías internacionales, el problema de los límites pesqueros nacionales, y el aumento de los costes de producción y comercialización están obligando a utilizar al máximo los recursos pesqueros disponibles. Existen, por otra parte, especies de pescado depreciadas por no ser habitual su empleo para consumo humano, que unidas a los residuos procedentes de las fábricas de conservas y de las factorías de fileteado de productos congelados constituyen una interesante materia prima para la obtención de concentrados de proteína de pescado. En este trabajo hemos ensayado la fabricación de estos productos por el método de hidrólisis ácida y de hidrólisis enzimática, utilizando, como materia prima, residuos de jurel y sardina formados en su mayor parte por cabezas, vísceras, piel y espinas. Los resultados son satisfactorios y el producto final tiene un contenido en proteínas del orden del 85 % y un contenido graso menor del 2,5 %. Las propiedades funcionales de hidrolizados son buenas, la solubilidad es total y puede utilizarse como fortificante en alimentos para ganado vacuno. Este tipo da productos ha tenido éxito en otros países, en los cuales la fabricación de harinas de pescado está siendo sometida a revisión para conseguir mejores calidades que permitan su utilización en productos de elevado valor comercial. En esta línea de trabajo los laboratorios de Tecnología están realizando grandes esfuerzos para conseguir hidrolizados de proteína con características tales que permitan su utilización como alimento humano
