Abstract

[ES] Dentro de las leches frescas comerciales, a nivel mundial, la leche ovina es una de las que presenta menor participación, muy por debajo de la de vaca y la de búfala. Aún así, en regiones como Castilla y León en España, la producción de leche ovina es de gran importancia económica, presenta un modelo productivo y agroindustrial avanzado y a su vez, constituye una importante alternativa de negocio agropecuario en áreas rurales desfavorecidas. En el presente trabajo, se describe la producción de leche ovina desde un panorama mundial y nacional. También, se analiza la producción de leche de ovino en Castilla y León, principal región productora de España; para ello, se describen los sistemas de producción, sistemas de cooperación y se presentan estrategias y estudios relacionados con la rentabilidad en las explotaciones de ovino lechero.

[EN] Inside the fresh milk business, worldwide, milk sheep is the one that has less participation, lower than the cows and buffaloes. Still, in some regions like Castilla y León in Spain, the milk sheep production has a great economic importance, because it presents a production model and an advanced agroindustrial and besides, is an important alternative livestock business in disadvantaged rural areas. In this paper, it is described the milk sheep production from a global and national point-view. Also it is analyzed the milk sheep production in Castilla y León, Spain's biggest producing region, for it production systems and cooperation systems are described and there are also provided strategies and studies related to profitability in dairy sheep farms.
