We discuss the cumulant approach to the non-equilibrium dynamics of strongly-interacting ultracold atomic gases. After a general introduction, we derive a non-Markovian, nonlinear Schr¨odinger equation for a Bose-Einstein Condensate, and a non-Markovian Boltzmann equation for the one-body density matrix of a thermal Bose gas. We apply these equations to the dynamics of Feshbach molecule production.
