In cultures of Aspergillus oryzae on polyurethane foam soaked in an amylaceous effluent, the rates of intake of oxidized and reduced sources of N act as a regulator of the pH in the range 4 to 7. Sinse the intake rates depend on the relative concentrations of both sources, its initial ratio can be used as a resource to control the pH profile, a factor that effects to the accumulation of amylases. A model is proposed which describes the simultaneous intake of different forms of N as a function of its relative concentrations, the biomass present and the growth rate.
