Endolisinas fágicas: ¿Nuevos bioconservantes para alimentos?

Abstract

La mejora de la calidad de la alimentación está intimamente relacionada con una mejora en la seguridad alimentaria y con la inocuidad de los alimentos entendida desde una perspectiva global. Los microorganismos, y en concreto las bacterias, son la principal causa de enfermedades causadas por el consumo de alimentos. Por ello, los métodos de control de la contaminación deben de ser eficaces a la vez que adecuados al tipo de productos que demanda el consumidor actual. Entre los distintos métodos, las estrategias basadas en la bioconservación poseen buenas perspectivas para ser aplicadas en un futuro más o menos próximo. En algunos casos la bioconservación se basa en la utilización de proteínas naturales con capacidad antimicrobiana como las endolosinas. Su inocuidad y eficacia hace de ellas buenas candidatas para ser utilizadas como bioconservantes en alimentos que impidan el desarrollo tanto de microorganismos alterantes como patógenos.
