Incremento de la concentración de flavonoles en uva de la variedad Tempranillo (Vitis vinifera L.) debido al deshojado precoz

Abstract

[EN]: Early leaf removal is an innovative viticultural practice aimed to regulate grape yield and reduce cluster compactness. The effects of early leaf removal, manual and mechanically performed, at two different phenological stages, pre-bloom and fruit-set, on the flavonol composition of Tempranillo (Vitis vinifera L.) grape berries were studied. The analysis of the flavonol content and profile by HPLC methods revealed a significant increase of 32-75 % of the total flavonol concentration in the berries of defoliated vines as compared to control (nondefoliated). Similar enhancements were also observed for some individual flavonols, especially for quercetin glycosides. Neither the timing nor the method of defoliation significantly affected flavonol accumulation in Tempranillo berries.

[ES]: El deshojado precoz es una novedosa técnica vitícola capaz de regular el rendimiento productivo del viñedo y reducir la compacidad de los racimos. En este trabajo, se han estudiado los efectos de la época (floración y cuajado) y del modo de ejecución (manual y mecánico) del deshojado precoz sobre la composición de flavonoles en uva de Tempranillo (Vitis vinifera L.), determinada mediante HPLC. Los resultados obtenidos mostraron un incremento de la concentración total de flavonoles en uva entre el 32-75 %, respecto al tratamiento control (sin deshojar), así como a nivel individual para algunos flavonoles, especialmente glicósidos de quercetina. La época y el modo de deshojado no afectaron significativamente la acumulación de estos flavonoides en la uva de Tempranillo.
