Análisis de las proantocianidinas de la uva por MALDI-TOF MS

Abstract

En el presente trabajo se ha realizado una revisión de los protocolos de preparación de muestra y las condiciones de análisis de proantocianidinas de uva por MALDI-TOF MS, así como las bases para la elucidación estructural de las mismas. Adicionalmente se ha aplicado esta técnica para la caracterización de un extracto comercial de pepita de uva. El espectro adquirido en modo lineal ha revelado la existencia de procianidinas desde GP1 hasta GP9 conteniendo de 1 a 4 unidades galoiladas. Finalmente, el análisis por MALDI-TOF MS ha permitido confirmar la autenticidad del origen botánico y el grado de purificación del extracto, tratándose en este caso de un extracto rico en procianidinas con elevado grado de polimerización.
