Efecto de la incorporación de grasas vegetales en raciones para corderos sobre la composición de la grasa interna

Abstract

[ES] Se utilizaron 27 corderos de raza Merina (16,3±0,28 kg), divididos en 3 grupos de 9 animales cada uno para estudiar el efecto de la incorporación de un 4% de aceite hidrogenado de palma o 4% de aceite de girasol en la ración para corderos en cebo sobre el perfil de ácidos grasos de los depósitos de grasa interna (mesentérica, omental y pélvico-renal). Los animales recibieron el pienso experimental (Control, Palma o Girasol) y paja de cebada ad libitum hasta que alcanzaron el peso al sacrificio (25 kg). El grupo que recibió el aceite de girasol mostró en todos los depósitos un menor porcentaje (P<0,05) de C14:0, C16:0 y C18:3 y una mayor proporción (P<0,05) de C18:0 y C18:1 trans-11. No se encontraron diferencias significativas en el porcentaje de ácido linoleico conjugado. La adición de un 4% de aceite hidrogenado de palma al concentrado para corderos en cebo, no modificó sustancialmente el perfil de ácidos grasos de los depósitos internos de grasa respecto al grupo control.

[EN] Twenty seven Merino lambs (16,3±0,28 kg) were used to study the effects of the addition of 4% hydrogenated palm oil or 4% sunflower oil to the concentrate for fattening lambs on fatty acid composition of internal fats. Animals were divided into three experimental groups (Control, Palma and Girasol) and received the concentrate and barley straw ad libitum. Lambs were slaughtered when they reached 25 kg. Lambs receiving sunflower oil showed a lower (P<0,05) percentage of C14:0, C16:0 and C18:3 and a higher proportion (P<0,05) of C18:0, C18:1 trans-11 in all depots. No differences were found in CLA proportion between experimental treatments. Palm oil inclusion did not cause considerable changes in fatty acid composition.
