Abstract

[FR]: On rappelle les facteurs et opérations pouvant avoir une influence sur les caractéristiques de la qualité des agrumes avant, pendant et après la récolte, ainsi que lévolution de ces caractéristiques au cours de la distribution ultérieure sous régime de froid. On s'attache spécialement aux traitements fongicides après récolte ainsi qu'au déverdissage et l'on indique les produits, doses, résidus et techniques d'application les plus recommandables. On étudie l'influence des conditions de préréfrigération, d'entreposage (température, humidité relative, circulation et renouvellement d'air, gerbage) et de transport ainsi que celle de la concentration en oxygène et en dioxyde de carbone de l'atmosphère d'entreposage sur la conservation des plus importantes espèces d'agrumes. Facteurs et opérations susceptibles d'influencer les caractéristiques qualitatives des agrumes et leur évolution au cours de la commercialisation sous régime de froid.

[EN]: The factors and operations that can influence the quality characteristics of citrus fruits before, during and after harvesting, as we//as the evolution of these characteristics during the subsequent refrigerated distribution are reviewed. Special consideration is given to fungicidal post-harvest treatments as we//as to degreening, and the most recommendable products, doses, residues and application techniques are indicated. The effects of precoo/ing, storage (temperature, relative humidity, air circulation and change, stacking) and transport conditions, are considered together with the influence of the concentration of oxygen and carbon dioxide in the storage atmosphere on the preservation of the most important citrus species.
