[ES] La producción de leche a partir de ganado ovino y caprino, como actividad en desarrollo en Argentina en estos momentos requiere considerar el aspecto productivo en su conjunto (producción-transformación-comercialización). Analizando la situación española, el 99% de la leche de oveja es transformada en industrias y el 51% de esta leche es utilizada para la fabricación de quesos mezclas con otros tipos de leche (vaca y cabra, sobre todo). En este trabajo serán analizados los condicionantes sanitarios establecidos por la Unión Europea para la producción de leche de oveja, así como diferentes alternativas para la comercialización de los productos mediante "marcas de calidad".
[EN] A global understanding (production, milk process and marketing) of milk production from small ruminants must be considered when this activity is in a development statement like in Argentina at this moment. At the spanish situation 99% of milk production from sheep is transformed at the industries. At Spain 51% of total sheep milk production is used to produce blend cheese (cows and goats milk). At this paper sanitary constraints from European Union and different posibilities of quality marks will be also presented.
