El pan integral posee un alto contenido de fibra dietética y minerales, además de ácido fítico, el cual se considera una sustancia antinutritiva por disminuir la biodisponibilidad de minerales tales como calcio, zinc, magnesio, hierro y fósforo. Un método para aumentar el valor nutritivo de los panes integrales sería la adición de la enzima fitasa, que degrada el ácido fítico, lo cual incrementaría el valor nutritivo de los panes integrales. En este estudio se presenta la posible utilidad de la enzima fitasa como coadyuvante tecnológico en la elaboración de pan integral, mediante el análisis de la evolución del ácido fítico durante la panificación, y la determinación de los parámetros de calidad del pan integral obtenido.
