Oligosacáridos derivados de la lactosa: síntesis, análisis y bioactividad

Abstract

[ES]: Este artículo de revisión aborda en primer lugar la obtención, análisis y caracterización de una serie de oligosacáridos derivados de la lactosa como los galacto-oligosacáridos (GOS) y los derivados de la lactulosa (OsLu). Igualmente, se describen los efectos beneficiosos más relevantes que pueden ejercer sobre la salud estos oligosacáridos no digeribles, haciendo especial hincapié en aquellos relacionados con el sistema gastrointestinal. Teniendo en cuenta las propiedades físico-químicas y bioactivas que presentan, los oligosacáridos derivados de la lactosa son ingredientes que pueden fácilmente incorporarse a un amplio número de alimentos y/o bebidas funcionales, evidenciando su indudable interés comercial. No obstante, es necesario realizar más estudios que confirmen la estabilidad de estos carbohidratos durante el procesado y conservación, así como las modificaciones organolépticas que puedan producirse una vez añadidos a la matriz alimentaria.

[EN]: This review firstly addresses the production, analysis and characterization of a range of lactose-derived oligosaccharides such as galacto-oligosaccharides (GOS) and oligosaccharides derived from lactulose (OsLu). Secondly, the most relevant beneficial effects exerted by this type of non-digestible oligosaccharides on human health, especially in regard to the gastrointestinal system, are also described. Taking into account their physico-chemical and bioactive properties, lactose-derived oligosaccharides can be easily incorporated as a high-value ingredient into a wide number of functional foods and/or beverages, highlighting their commercial importance. However, it is necessary to carry out further studies on the stability of these oligosaccharides under the processing conditions and applied storage, as well as on the potential organoleptic modifications produced by their addition to real food products.
