[ES] La calidad del maíz dulce se determina por degustaciones, éste es un método subjetivo y complejo. Hay métodos objetivos, rápidos y sencillos, con mayor capacidad de resolución; en este trabajo se han empleado dos de ello: determinación refractométrica del contenido en azúcares y de la resistencia a punción mediante un penetrómetro, que no sirven para predecir los resultados de las degustaciones pero sí para complementarlas.
[EN] Sweet corn quality is determined by tasting, which is a Subjective and complicated method. There are two objectives methods faster and easier to develop than tasting: refractometer measure of Sugar content and tenderness measured with a penetrometer, which don’t predict results of testing but complement it.
