MANJARES Y TRADICIONES EN LAS COCINAS DE LAS CONDESAS. EL RECETARIO DE LA CASA DE BURETA

Abstract

The kitchen in a house of the nobility was akin to a cosmos of traditions, culture and skills. At the beginning of the 21st century the complexity and richness of the Ancient Regime continues to be maintained, equally in the delicacies employed in their recipes, the in-house procedures and the maintenance of a pantry in order to feed their lineage through different periods and seasons. The Bureta’s Cookbook in Aragon is a clear example of this lordly gastronomy which brings together the culture of fine dining from various women of this ancient and noble family. Among these women can be found the heroine of the sieges of Zaragoza in 1808, Maria Consolación Azlor y Villavicencio, countess of Bureta and later baroness of Valdeolivos.
