Utilização de fungicidas por leveduras

Abstract

Os fungicidas são apontados por vários investigadores como mutagénicos e com efeitos teragénicos em animais, mesmo em concentrações muito baixas. O presente trabalho teve como principais objectivos averiguar a evolução de fungicidas ao longo do processo de fermentação e em vinhos portugueses, bem como a possibilidade de utilização de leveduras na destoxificação de mostos.
