O presente trabalho descreve os conceitos fundamentais da dieta empregada tradicionalmente no tratamento do diabete melito. Revisa e analisa criticamente os aspectos recentes que já podem ser incorporados à aplicação prática. Nesse sentido, são abordados os tópicos relacionados à taxa e à qualidade das gorduras que podem ser ingeridas, à quantidade e ao tipo de alimentos ricos em fibras que devem compor a dieta, à resposta glicêmica dos diferentes alimentos ricos em carboidratos, à quantidade mínima necessária de proteínas que deve ser ingerida e ao uso de adoçantes artificiais.

The present paper initially describe the fundamentals concepts of the diet traditionally utilized in the treatment of diabetes mellitus. The paper also review and critically analise the recent aspects already incorporated into clinical practice. The topics related to the amount and quality of the fats allowed to be ingested, to the amount and type of fiber rich foods which must be part of the diet, to the glycemic response of different carbohydrate foods, to the minimal amount of proteins which must be ingested and to the use of artificial sweeteners are discussed.
