Abstract

¿Por qué la carne de perro la comen con fruición algunas tribus de indios americanos, mientras que al hombre europeo le horroriza tomarla? ¿Por qué es estimado el saltamontes por algunos pueblos africanos y es rechazado por otras gentes? ¿Por qué a los musulmanes les repugna la carne de cerdo? ¿Por qué en algunas zonas de Melanesia y Polinesia el varón no debe ver comer a la mujer, ni ésta al varón? ¿Por qué los estados depresivos se acompañan de una pérdida de las ganas de comer? ¿O por qué el estado de ansiedad conlleva a menudo una exacerbación del apetito? Estas y otras preguntas, quizás más importantes, se refieren al modo de comportarse o conducirse el hombre ante los alimentos, al seleccionarlos, prepararlos y consumirlos. El hombre está en relación constante con su medio ambiente para mantenerse en la existencia y conseguir un equilibrio vital. A la relación de intercambio con la que el sujeto consigue los elementos que necesita su organismo para sostener la estructura biológica y mantener las necesidades energéticas se llama ((conducta alimentaria». En esa conducta podemos distinguir procesos preparatorios (como el conseguir alimentos) y procesos culminantes (como el «comer» o ingerir); en cualquiera de estos aspectos el hombre se conduce con cierto orden, siguiendo pautas que en parte son individuales, y en parte también colectivas, incorporadas como costumbres.
