Estudio experimental de la cinética de secado empleando un secadero solar

Abstract

La investigación aquí presentada, consiste en un trabajo experimental en el que se procedió a la utilización de un secadero solar para estudiar la cinética de secado de diferentes productos alimenticios. La primera parte de la investigación se basó en la caracterización del secadero solar. Un proceso de análisis para fijar una serie de condiciones climáticas con las que trabajar posteriormente para el secado de los productos. En la segunda parte, se trabajó secando zanahorias, plátanos y manzanas ante las condiciones de humedad y temperatura previamente fijadas, para estudiar cómo se comportaba cada muestra. En la tercera parte del trabajo, se utilizaron los resultados de cada producto, sobre cómo se comportaban ante el secado, para estudiar la tendencia y velocidad de secado de cada producto, así como el análisis de la pérdida de masa. Finalmente con los resultados experimentales realizamos un modelo para estudiar el comportamiento de cada fruta ante unas condiciones de humedad y temperatura variables.
