Modelado de la Transferencia de Calor y Masa Durante el Enfriamiento de Carne Vacuna

Abstract

Con el fin de analizar las pérdidas de peso por evaporación de agua durante el enfriamiento de carne vacuna, se realiza un modelo transitorio de transferencia de calor y masa sobre una pieza de carne de geometría cilíndrica, dentro de un recinto en el que se tiene una circulación de aire. El modelado se realiza utilizando el software COMSOL Multiphysics. La difusión de calor y masa de agua dentro de la carne son modeladas, incorporando la variación de la actividad del agua superficial. Se considera el enfriamiento de la carne por convección, radiación y evaporación de agua. El coeficiente de convección utilizado en el modelo, asumido constante y uniforme, es estimado a partir de mediciones experimentales. Se utiliza el modelo de intercambio de radiación entre superficies de un recinto para determinar el enfriamiento radiativo. El modelo es validado con mediciones experimentales de temperatura de la carne y la masa de agua evaporada acumulada durante el período de enfriamiento. Los resultados obtenidos del modelo y del experimento son muy similares, con un error relativo máximo para la masa evaporada menor al 1 %. El modelo resulta una herramienta útil para evaluar el uso de enfriamiento radiativo para minimizar las pérdidas evaporativas en cámaras frigoríficas.
