Identification of Lactic Acid Bacteria Isolated from Freeze-dried Kefir Grains (Georgia, Russia).

Abstract

グルジア由来の凍結乾燥ケフィア粒およびそれを用いて調製したケフィアから乳酸菌の分離を行い, それぞれの乳酸菌叢を検討した.その結果は以下のとおりであった.1.総計103株の分離株から選択した7代表株は, それぞれW. confusa, L .kefirおよびL. kefiranofaciensと同定された.L. kefiranofaciensと同定された4株の内3株は, 多糖産生能が無く, 表現形質からはL. acidophilus (GKL5, GKL7) およびL. delbrueckii subsp.lactis (GKL9) と同定されるべき性質であった.2.W. confnsa (GKL1) はケフィア中で優勢であったにもかかわらず, ケフィア粒からは1株も分離されなかった.また乳酸球菌はいずれの試料からも分離されなかったことと合わせ, 凍結乾燥前のケフィア粒の培養条件から乳酸球菌が淘汰され, その空白に混入した生育の早いW. confusaが乳中で優勢を占めたと推定した.3.ホモ発酵桿菌L. kefirgranumおよびヘテロ発酵桿菌L. parakefirが分離されなかったことから, ケフィア粒により, その構成微生物叢に差異があることが認められた.4.ケフィア粒より分離されているL. acidophilusおよびL. bulgaricusなどのThermobacteriumに属する菌種はL. kefiranofaciensの多糖非産生変異株またはL. kefirgranumに整理される可能性が認められた.
