INFLUÊNCIA DO ENVELHECIMENTO NO TEOR DE COBRE EM CACHAÇAS

Abstract

ABSTRACT Possible technological solution to reduce copper levels in “cachaças” was approached. For this, seven “cachaças” of different sources were analyzed spectrophotometrically for copper content, before and after storage in little oak barrels during 6 months. It was observed that aging promoted significant reduction in copper levels (74,1 ± 6,7%) of “cachaças” . This process may constitute one of the forms to reduce the contamination levels of this component in “cachaças”.
