Desarrollo de alimentos complementarios instantáneos “papillas” a base de camote y zapallo

Abstract

Objetivo: Determinar en qué medida el desarrollo de alimentos complementarios instantáneos “papillas” a base de camote y zapallo se pueden usar en la nutrición infantil. Métodos: Variedades de camote y zapallo pulpa anaranjada-amarilla con alto contenido de ß-carotenos (UNA 100-INIA), variedad “2000” y la variedad Huambachero, una variedad de pulpa amarilla y piel morada pero de mayor contenido de materia seca; zapallo variedad macre y otras variedades de la región Lima. Resultados: Los análisis proximales realizados a las harinas crudas de arroz, maíz y de malta de cebada muestran que sus contenidos de proteína son similares y sus contenidos de fibra cruda son bajos. Los análisis proximales y el porcentaje de gelatinización de las harinas precocidas (mezcla) de las dos variedades de camote Huambachero e INA 100-INIA así como del zapallo., al analizar el porcentaje de gelatinización de la harina precocida para determinar su grado de cocción, se obtuvieron valores de 97,25% lo que indicó que las harinas estaban completamente cocidas y cumplían con el requerimiento que el Ministerio de Salud establece para este tipo de productos. Conclusiones: Se ha logrado procesar el camote sin elevar los costos de producción de la papilla, proporcionándole al cultivo una alternativa industrial. Se ha logrado obtener un producto que cumple con todos los requisitos nutricionales y de calidad exigidos por el Ministerio de Salud para este tipo de alimentos, habiéndose logrado incrementar el contenido de retinol de la papilla, siendo éste más elevado en los camotes anaranjados.Palabras clave: Papillas, ß- carotenos, deshitración, harina.
