
Em vista do aumento da população com restrições a produtos oriundos do leite, seja por questões de saúde (intolerâncias e alergias) ou filosóficas (veganismo), se faz necessário o desenvolvimento de produtos com características sensoriais similares. Sabendo-se que o queijo é um alimento muito difundido na dieta de diversas culturas, tanto em sua forma in natura ou como ingrediente introduzido em demais refeições, estima-se uma demanda deste produto de base vegetal. Porém, sua fabricação depende de matéria-prima de origem animal que contém lactose e componentes alérgenos. Sendo assim, relata-se o desenvolvimento de um alimento tipo requeijão de origem vegetal à base de amendoim, consequentemente, isento de lactose e caseína. Para tanto, utilizou-se o grão de amendoim cru para desenvolver um extrato vegetal, que será coagulado com a ação de um ácido (cítrico). Como resultado, tem-se um alimento tipo requeijão e outro tipo ricota temperada. Apresenta-se a viabilidade técnica do desenvolvimento do alimento em questão. Abstract Bearing in mind the increase of dairy restriction diets among the population, whether for health (intolerance and allergy) or philosophical (veganism) reasons, it is necessary to develop products with similar sensorial features to those available on the market that respect such diet restrictions. Knowing that cheese is a very wide spread food in the diet of several cultures, either in its in natural form or as an ingredient introduced in other meals, there is a rather great demand of it, however, it dependson raw material of animal origin in which contains lactose and allergen components. Therefore, it is proposed the development of a plant origin food, using peanuts, which consequently will be lactose and casein free, fulfilling the target public necessity, in addition to having raw material with high availability in the market. From the raw peanut grain, a plant extract was developed, which was subsequently coagulated with the action of an acid resulting in a food as cream cheese. In the residue from the manufacture of the peanut extract were added seasonings, followed by homogenization and shape, resulting in a ricota type of food.
