Alimentación y análisis nutricional en La Habana bajo el prisma de la etnocontabilidad : el caso comparativo de las familias Vázquez y López

Abstract

El presente artículo muestra la influencia sobre la cultura alimentaria de la isla que han tenido las transformaciones socioeconómicas impuestas en Cuba a partir del triunfo de la revolución. Comprobamos una falta de fiabilidad de los datos macroeconómicos y estadísticos oficiales sobre la producción agrícola, por un lado, y sobre el consumo nutricional de los cubanos, por otro. Este fenómeno lo encontramos a su vez en los organismos internacionales, como la FAO o la OMS, ya que, en la mayoría de los casos, sin datos propios, publican los mismos datos oficiales sin análisis crítico. Este artículo propone una comprensión más directa y global del fenómeno alimentario en Cuba a través de la cohabitación y la observación participante en dos familias, los Vázquez y los López. Nuestra metodología consiste en un análisis etnocontable del gasto alimentario y de los circuitos utilizados por la familia durante 15 días, además de los menús consumidos y su conversión nutricional (kcal, proteínas, glúcidos, lípidos).
