Pemanfaatan Biji Cempedak Sebagai Subtitusi Tepung Tapioka Dalam Pengolahan Kerupuk

Abstract

Biji cempedak merupakan limbah yang jarang dimanfaatkan oleh masyarakat, yang mengandung karbohidrat yang sangat tinggi sehingga untuk mengoptimalkan pemanfaatannya maka dibuat dengan berbagai macam olahan diantaranya tepung. Tepung biji cempedak yang dibuat dengan teknik modifikasi larutan asam klorida. Salah satu mengoptimumkan pemanfaatan tepung biji cempedak adalah mengolahnya menjadi kerupuk. Tujuan penelitian ini untuk mengetahui pengaruh perendaman parutan biji cempedak pada berbagai konsentrasi larutan asam klorida, proporsi tepung biji cempedak dan tepung tapioka terhadap volume pengembangan kerupuk serta mengetahui tingkat penerimaan konsumen terhadap produk kerupuk biji cempedak. Penelitian ini dilakukan dengan menggunakan Rancangan Data Percobaan Faktorial dengan dua Faktor. Faktor pertama konsentrasi larutan asam klorida dengan 4 taraf (0 %, 0,5 %, 1 %, 1,5 %) dan faktor kedua proporsi tepung biji cempedak dan tepung tapioka dengan taraf (25%:75% ; 20%:80% ; 15%:85%) dan diulang sebanyak 3 kali ulangan. Hasil analisis ragam anova menunjukkan bahwa konsentrasi larutan asam klorida, proporsi tepung biji cempedak dan tepung tapioka memberikan pengaruh nyata terhadap volume pengembangan kerupuk. Perlakuan terbaik adalah perlakuan A0P2 yaitu tanpa konsentrasi larutan asam klorida dengan proporsi tepung biji cempedak 20% dan tepung tapioka 80% memiliki volume pengembangan kerupuk tertinggi sebesar 119,33%. Secara organoleptik rasa, aroma, warna dan tekstur kerupuk biji cempedak diperoleh hasil uji organoleptik rasa 5,32 (Cenderung agak menyukai), aroma 5 (Agak menyukai), warna 5,56 (Cenderung menyukai), dan tekstur 5,32 (Cenderung agak menyukai). Penerimaan konsumen yang terbaik diperoleh pada kerupuk A0P1 yaitu tanpa konsentrasi larutan asam klorida dengan proporsi tepung biji cempedak 25% dan tepung tapioka 75% sebesar 0,86.
